Sichuan is the salt and pepper of the Sichuan Province. Sichuan peppercorn is actually a dried outer husk of the prickly ash shrub. The combination of both the Sichuan peppercorn and chilli creates a wonderful peppery aroma to the chilli oil. When added to my chilli, the peppercorn I use has a distinctive warm, fiery texture. Warm and tingly, the distinctive roasted aroma works wonders to a vast variety of dishes. My individual mix of all the flavours I enjoyed in the Sichuan markets and restaurants creates a new flavour, all in one small jar!
